Blanching

Blanching

Blanching is a short-term treatment of the product with boiling water or steam, which is used to eliminate bitterness or a specific smell. Also, vegetables, fruits and herbs sometimes need to be blanched in order to preserve the color of some vegetables, fry potato slices, peel tomatoes, remove bitterness and a specific smell of the product, then freeze (for example, greens).

Blanching time

The duration of blanching products depends on the size and type of product itself. Each vegetable will have its own blanching time. But in any case, it only takes a few minutes, because blanching is not cooking, but a quick scalding or scalding of any food product.

Usually the blanching process lasts no more than 2-3 minutes.
