For many, rice in soup is associated exclusively with “Kharcho”, but meanwhile there are many other recipes with this grain crop. Everyone knows that soup provides the body with the necessary nutrients: carbohydrates, fats, proteins and vitamins. Thus, the soup normalizes the biochemical processes of our body. Cheese Soup with Rice is a diet meal, which means that it is a very healthy first course for us.

Ingredients for cheese soup with rice

  • 🌽Fresh cilantro - a quarter of a bunch
  • 🌽 Bay leaf - 3 pcs.
  • 🌽 Onion - 1 pc.
  • 🌽 Butter - 30 g.
  • 🌽 Ground black pepper - a pinch
  • 🌽 Long-grain rice - 100 g.
  • 🌽 Salt - 0.5 tsp.
  • 🌽Processed cheese - 200 g.
  • 🌽 Fresh dill - 0.25 bunch
  • 🌽 Garlic - 2 cloves

For croutons:

  • 🌽Baton - 200 g.
  • 🌽Olive oil - 1 tbsp. l.
  • 🌽 Provence herbs - a pinch

How to cook cheese soup with rice

  • Rinse the rice until the water runs clear. We shift into a saucepan with a volume of 1.5-2 liters. Fill with water, add bay leaf and set to cook until half cooked. This will take about 10 minutes.
  • Peel and finely chop the onion and garlic.
  • Melt the butter in a frying pan and fry the onion and garlic until golden brown.
  • 🌽 Add processed cheese to the soup, and cook for 2 minutes, stirring constantly.
  • 🌽 Cook croutons. Take a loaf and cut into medium cubes.
  • 🌽 Fry the bread in a pan, season with Provence herbs and sprinkle with olive oil.
  • 🌽 Wash greens and dry with napkins. Finely chop.
  • 🌽 Add onion and garlic frying to the pan, salt and pepper. Stirring constantly, cook for 3 minutes over low heat. Then take the soup off the heat. Cover with a lid and let it brew.
