How to cook soup with barley and pumpkin
Peel and wash the leek, cut into rings.
Place the leek in a saucepan and lightly fry it directly in it with a little olive oil.
Add bacon and diced pumpkin. Stirring with a wooden spatula, fry everything for a few minutes.
Add barley, salt and pepper.
Pour in the hot vegetable broth and simmer for about 30 minutes. At the end of cooking, add hard cheese.
