Bean soup
To strengthen the heart and improve the state of the cardiovascular system, it is necessary to include dishes from legumes in the diet more often, bean soup will be a particularly useful dish. Unfortunately, first courses from beans are not often found on the daily table, but they are the most affordable source of plant-based protein.
Ingredients for bean soup
- 🌽 Beans - 1 tbsp.
- 🌽 Potatoes - 4-5 pcs.
- 🌽Carrot - 1 pc.
- 🌽 White onion or onion - 1 pc.
- 🌽 Parsley - half a bunch
- 🌽 Garlic - 2-3 cloves
- 🌽 Eggs - 2 pcs.
- 🌽Salt
- 🌽Olive oil
- 🌽 Pepper
- 🌽Tomatoes - optional
How to make bean soup
- Soak the beans overnight. We wash, fill with water and set to cook until tender, about 40 minutes.
- 🌽 Wash potatoes, peel and cut into strips.
- 🌽 Peel the onion, cut into 4 parts and chop into slices.
- 🌽 My carrots, clean and cut into strips.
- 🌽 Wash greens, dry and cut not finely.
- Peel the garlic and cut into large cubes.
- Let’s boil the potatoes. Fry the onion in 2 tbsp. olive oil and add to potatoes.
- 🌽 Carrots are also fried in 2 tbsp. l. olive oil and transfer to a bowl with other vegetables. If using tomatoes, add them at this stage after dicing them.
- 🌽 As soon as the potatoes are ready, add the beans, salt and pepper.
- 🌽 At the end, add greens and boil for 1-2 minutes. Let the bean soup brew for 10 minutes.
- 🌽While the soup is infused, in 1 tbsp. sauté the garlic with olive oil until golden brown.
- 🌽Sprinkle the finished bean soup with fried garlic.
