Semifredo - an unusually delicious Italian dessert: soft ice cream with filling. The filling can be cookies, nuts, candied fruits, chocolate… Raw eggs and cream are an obligatory ingredient of semifreddo. The taste of semifreddo depends on the additives you use. The finished dessert can look like small cakes, or a whole cake made from ice cream.
Ingredients for Berry Semifreddo
- 🍌 Egg whites - 3 pcs.
- 🍌 Instant coffee - 1 tbsp. l.
- 🍌 Cream with a fat content of 35% - 600 ml.
- 🍌 Sugar - 180 g.
- 🍌 Various fresh berries - 500 g.
- 🍌Hazelnut - 50 g.
How to make Berry Semifreddo
Stirring constantly, fry the hazelnuts in a dry hot frying pan for 6 minutes. Let it cool, then coarsely chop with a knife. Protein shake with coffee. While continuing to beat, gradually add sugar and hazelnuts. Beat until dense shiny foam.
Put the resulting meringue mass in a layer of 2 cm on a baking sheet covered with a sheet of parchment, and place in an oven preheated to 90 ° C for 3 hours. Remove from the oven and allow to cool completely.
Wash the berries and dry them thoroughly. Break the cooled meringue into small pieces.
Whip the cream into a fluffy foam. Add the meringue pieces and mix gently.
Cover a detachable form with a diameter of 28 cm with a sheet of parchment. Put a third of the whipped cream with meringues in a mold, spread half of the berries on top in an even layer.
Put another third of the cream and the remaining berries, then the remaining cream. Cover the cake with cling film, put a plate on top and press it lightly. Put in the freezer for a day.
